Recipe 1)

Lamb Leg Roast Recipe

 Materials:

1 whole leg of lamb (about 2-3 kg), cleaned and trimmed
2 large onions, finely chopped
1 cup sour yogurt
4-5 cloves of garlic, minced
2 inches ginger, minced
4-5 green chillies, sliced
1/2 cup mustard oil (or any cooking oil)
2 tbsp ghee (butter)
1 tablespoon cumin seeds
2 bay leaves
4-5 cardamoms
4-5 cloves
1 inch of cinnamon
1 teaspoon turmeric powder
2 tbsp red chili powder (as per taste)
1 tablespoon of coriander powder
1 teaspoon garam masala powder
1/2 teaspoon of pepper powder
Salt to taste. Fresh coriander leaves, chopped (for garnish)

Marinate:

In a large bowl, mix the sour yogurt, half the minced garlic and ginger, turmeric powder, red chili powder, coriander powder, and salt.
Make small slits in the lamb leg and rub the mixed marinade into the meat well so that the spices penetrate the meat.
Cover and refrigerate for at least 4 hours, overnight for best results.

Method:

Preheat the oven to 180°C (350°F).

Heat mustard oil in a large pot.

When the oil is hot, add cumin seeds, bay leaves, cardamom, cloves and cinnamon.

Add chopped onion and saute until soft and translucent.

Add the rest of the minced garlic and ginger and fry for a few minutes.

Place the marinated lamb legs in the pan and sear well on all sides.

Then cover the pot and cook on low heat for 1.5-2 hours or until the meat is fully cooked and tender. Pour oil over the meat occasionally to prevent the meat from drying out. When the meat is cooked, place the pot in the oven and roast for another 20-30 minutes to get a nice reddish color on top.

Finally sprinkle garam masala powder and chilli powder.

Garnish with fresh coriander leaves and serve.

Enjoy this lamb leg roast with rice, polao or bread.

Recipe 2)

Beef Chunk Fried Recipe

Materials:
1 kg beef (cut into large pieces)
2 large onions, finely chopped
1 cup sour yogurt
2 tablespoons of garlic paste
2 tbsp ginger paste
4-5 green chillies, sliced
1/2 cup mustard oil or soybean oil
2 bay leaves
4-5 cardamoms
4-5 cloves
1 inch of cinnamon
1 teaspoon turmeric powder
2 tbsp red chili powder (as per taste)
1 tablespoon of coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
Salt to taste
1/2 teaspoon of pepper powder
1/2 cup tomato puree (optional)
Fresh coriander, chopped (for garnish)

Method:
First, wash the meat well and drain the water. Marinate the meat pieces by mixing sour curd, turmeric powder, red chili powder, coriander powder, cumin powder and salt in a large bowl. Keep for at least 1 hour, the longer the time, the better the taste.

Heat oil in a large pot. When the oil is hot, add bay leaves, cardamom, cloves and cinnamon. Then add chopped onion and fry until soft and translucent. Mix with garlic paste and ginger paste and fry for a while until the raw smell goes away.
Keep stirring the marinated meat well. Fry the meat on medium heat till the water dries up.
Once the meat is fried well, mix it with tomato puree (optional) and fry for a while.
Cover with a little water and cook on low heat for 1-1.5 hours, until the meat is tender and cooked through. Stir occasionally to prevent sticking to the pan.
Once the meat is cooked, mix it well with garam masala powder and chilli powder.
Serve hot sprinkled with chopped green chillies and coriander leaves.
Enjoy this beef roast with rice, roti or paratha.

Recipe 3)
Grilled Beef Soy Recipe
Materials:

500g beef (steak or thinly sliced)
1/4 cup soy sauce
2 tablespoons honey or brown sugar
1 tablespoon garlic paste
1 tablespoon of ginger paste
1 tablespoon sesame oil (optional)
2 tablespoons of lemon juice
1 tablespoon white vinegar (optional)
1 teaspoon of pepper powder
Salt to taste (soy sauce contains salt, so add a little)
2 tbsp sesame seeds (for garnishing)
Chopped fresh coriander or mint leaves (for garnish)

Method:

First, make the marinade by mixing soy sauce, honey or brown sugar, garlic paste, ginger paste, sesame oil, lemon juice, white vinegar, pepper powder and salt in a large bowl.
Mix the meat pieces well with the marinade. Let marinate in the fridge for at least 2 hours, 4-6 hours or overnight for best results.
Take the marinated meat out of the fridge and bring it to normal temperature.
Preheat grill or grill pan to medium heat.
Brush the grill pan lightly with oil to prevent the meat from sticking.
Place the marinated meat pieces in the grill pan and grill for 5-7 minutes per side or until done to your liking. Adjust time according to thickness of steak.
Place the grilled meat pieces on a plate and let them rest for a while so that the meat juices are well distributed inside.
Before serving, sprinkle sesame seeds on top and serve garnished with fresh coriander or mint leaves.

Serve this grilled beef with soy rice, noodles or salad.
Recipe 4)

Beef Stroganoff Recipe
Materials:

500g beef (striped or cut into strips)
 2 tablespoons of flour
 1 teaspoon of salt
 1 teaspoon of pepper powder
 2 tablespoons oil or butter
 1 large onion, chopped
 2-3 cloves of garlic, minced
 200 grams of mushrooms, thinly sliced
 1 cup meat stock or water
 1 tablespoon of tomato puree or tomato sauce
 1 tablespoon Worcestershire sauce (optional)
 1 cup of heavy cream or sour cream
 1 teaspoon paprika (optional)
 2 tbsp coriander leaves (for garnishing)

 Method:

Mix the flour, salt and pepper powder in a large bowl. Dredge the beef strips in this, making sure the meat pieces are well coated in the flour mixture.
Heat oil or butter in a large pan. Once the butter has melted, add the meat pieces to the pan and fry until lightly browned on all sides. Fry in several portions without adding too much meat at a time. Once fried, remove the meat pieces from the pan and keep aside.

In the same pan add some more oil or butter and saute the chopped onion until soft. Then add the minced garlic and fry for one minute. Pan fry the mushroom slices until soft and lightly browned. Add the meat stock or water, tomato puree and Worcestershire sauce (if using) to the pan and mix well. When the mixture boils, reduce the heat and cook for 10-15 minutes so that all the ingredients are mixed together. Add the pan fried meat pieces and mix everything well. Add the pure cream or sour cream to the pan and mix everything. Cook on low flame for 5-10 minutes so that the mixture becomes thick and smooth. If using paprika, add now.

Garnish with coriander leaves after cooking and serve hot.

Beef stroganoff is usually served with pasta, rice or mashed potatoes.
